Nancy Singleton Hachisu moved from California to Japan in 1988 with a plan to stay for a year. She wanted to learn the language, see some sights, no big deal. As it turns out, she fell in love with the culture, and has made the country her home. These days, the author and cooking instructor spends her time offering authentic and approachable ways to experience Japanese cuisine. Her latest book, Preserving the Japanese Way, is essential for anyone interested in traditional practices of preserving fish, fruits and vegetables.
